Vanilla Coconut Milk Ice Cream

Ingredients:
• 2 cups canned coconut milk, divided
• Liquid stevia extract, to taste
• 1 teaspoon vanilla extract
Instructions:
1. Melt the coconut oil in a saucepan, then whisk in half of the coconut milk.2. Bring to a boil, then reduce heat and simmer for 30 minutes.
3. Pour into a bowl and sweeten with stevia, then let cool to room
temperature.
4. Stir in the vanilla extract, then pour the remaining coconut milk into a bowl.
5. Beat the coconut milk until stiff peaks form, then fold into the other mixture.
6. Spoon into a loaf pan and freeze until firm.

Coconut ice-cream is always very delicious. But, I couldn't even think, that it is possible to make it home. Now, I will definitely try.
