Lemon Meringue Cookies

Ingredients:
• Pinch salt
• Liquid stevia extract, to taste
• 1 teaspoon lemon extract
Instructions:
1. Preheat the oven to 225°F and line a baking sheet with parchment.2. Beat the egg whites in a bowl until soft peaks form.
3. Add the salt and stevia, then beat until stiff peaks form.
4. Fold in the lemon extract, then spoon into a piping bag.
5. Pipe the mixture onto the baking sheet in small rounds.
6. Bake for 50 to 60 minutes until dry, then open the oven door and cool 20 minutes.

At first sight, I thought that these cookies are difficult in cooking. When I saw the recipe, I tried to cook them at once. The result was amazing.
