Egg Salad Over Lettuce

Ingredients:

• 3 large hardboiled eggs, cooled
• 1 small stalk celery, diced
• 3 tablespoons mayonnaise
• 1 tablespoon fresh chopped parsley
• 1 teaspoon fresh lemon juice
• Salt and pepper
• 4 cups fresh chopped lettuce

Instructions:

1. Peel and dice the eggs into a mixing bowl.
2. Stir in the celery, mayonnaise, parsley, lemon juice, salt and pepper.
3. Serve spooned over fresh chopped lettuce.
