Avocado Spinach Salad with Almonds

Ingredients:

• 4 cups fresh baby spinach
• 2 tablespoons olive oil
• 1 ½ tablespoons balsamic vinegar
• ½ tablespoon Dijon mustard
• Salt and pepper
• 1 medium avocado, sliced thinly
• ¼ cup sliced almonds, toasted

Instructions:

1. Toss the spinach with the olive oil, balsamic vinegar, Dijon mustard, salt and pepper.
2. Divide the spinach between two salad plates.
3. Top the salads with sliced avocado and toasted almonds to serve.
