Slow-Cooker Chicken Fajita Soup ... Keto Low Carb Lunch

Slow-Cooker Chicken Fajita Soup

Servings: 4

Cook Time: 6 hours

Ingredients:

• 12 ounces chicken thighs
• 1 cup diced tomatoes
• 2 cups chicken stock
• ½ cup enchilada sauce
• 2 ounces chopped green chiles
• 1 tablespoon minced garlic
• 1 medium yellow onion, chopped
• 1 small red pepper, chopped
• 1 jalapeno, seeded and minced
• 2 teaspoons chili powder
• ¾ teaspoon paprika
• ½ teaspoon ground cumin
• Salt and pepper
• 1 small avocado, sliced thinly
• ¼ cup chopped cilantro
• 1 lime, cut into wedges

Instructions:

1. Combine the chicken, tomatoes, chicken stock, enchilada sauce, chiles, and garlic in the slow cooker and stir well.
2. Add the onion, bell peppers, and jalapeno.

3. Stir in the seasonings then cover and cook on low for 5 to 6 hours.
4. Remove the chicken and chop or shred then stir it back into the soup.
5. Spoon into bowls and serve with sliced avocado, cilantro, and lime wedges.
