Chocolate-Dipped Coconut Keto Fat Bombs

Ingredients:
• 1 cup canned coconut milk
• ¾ cup unsweetened shredded coconut
• 2 teaspoons vanilla extract
• Liquid stevia extract, to taste
• ¼ cup chopped dark chocolate
• ½ teaspoon palm shortening
Instructions:
1. Combine the coconut butter and coconut milk in a small saucepan over low heat.2. When melted, stir in the coconut and vanilla, then sweeten to taste.
3. Remove from heat and chill for 1 to 2 hours until firm.
4. Divide the mixture into 16 portions and roll them into small balls.
5. Melt the dark chocolate in the microwave with the palm shortening.
6. Dip the balls in the chocolate and place them on a plate.
7. Chill until the chocolate is hardened, then serve.
