Quick & Easy Keto Omelet Egg Muffins

Ingredients:


12 large eggs
1/2 cup red bell pepper, chopped
1/2 cup green bell pepper, chopped
1/2 cup onion, chopped
1 1/2 cups cheddar cheese, shredded
3/4 cup almond milk
1/4 tsp ground black pepper
1/2 tsp salt

Directions:

Preheat the oven to 375 F.

Spray muffin tray with cooking spray and set aside.

In a large mixing bowl, whisk together eggs, almond milk, black pepper, and
salt.

Stir in onion, bell peppers, and 1 cup cheese.

Pour batter into the prepared muffin tray then sprinkle remaining cheese on top.

Bake in preheated oven for 25 minutes.

Serve and enjoy.
