Quick & Easy Keto Mix Vegetable Salad

Ingredients:
2 cups cherry tomatoes, halved2 cups cauliflower florets
1 bell pepper, seeded and chopped
1 cucumber, seeded and chopped
For dressing:
4 tsp Dijon mustard2 tbsp shallots, minced
1/2 cup red wine vinegar
2 garlic cloves, minced
2 tsp Italian seasoning
1/2 cup olive oil
Pepper
Salt
Directions:
In a small bowl, combine together all dressing ingredients.Add all salad ingredients to the large bowl and toss well.
Pour dressing over salad and toss well.
Place salad bowl in refrigerator for 4 hours.
Serve and enjoy.
