Lemon Chicken Kebabs with Veggies

Servings: 4
Prep Time: 10 minutes
Cook Time: 15 minutes

Ingredients:

• 1 pound boneless chicken thighs, cut into cubes
• ¼ cup olive oil
• 2 tablespoons lemon juice
• 1 teaspoon minced garlic
• Salt and pepper
• 1 large yellow onion, cut into 2-inch chunks
• 1 large red pepper, cut into 2-inch chunks
• 1 large green pepper, cut into 2-inch chunks

Instructions:

1. Toss the chicken with the olive oil, lemon juice, garlic, salt, and pepper.
2. Slide the chicken onto skewers with the onion and peppers.
3. Preheat a grill to medium-high heat and oil the grates.
4. Grill the skewers for 2 to 3 minutes on each side until the chicken is done.
